Copper Chimney is located in the luxurious boutique <a href="http://www.hotellesoleil.com/">Le Soleil Hotel</a> (rated 4-diamonds by American Automobile Association since opening in 1999). Downtown in the financial district, the restaurant/hotel is close to Vancouver&#8217;s stunning <a href="http://www.vancouverconventioncentre.com/">Convention Centre</a> as well as <a href="http://www.pacificcentre.ca">Pacific Centre mall</a>.</p>
<p>I visited the restaurant at Le Soleil around 7 or 8 years ago, and the impressive and airy dining room is much the same today, but with some updates I am sure. I&#8217;m really interested in visiting Copper Chimney again to see the current menu concept. In the meantime, here&#8217;s what Mary sent along about Copper Chimney:</p>

<p>Irashai is currently the talk of the town, after hosting a big open house party last week for local residents, bloggers, and news media. Below are some photos that show off the restaurant&#8217;s upscale decor and delicious food. I&#8217;d really like to go back to try a full meal at Irashai. <p>Late on a Saturday night, a friend and I were wandering the misty streets of this former warehouse district, and poked our heads into a bunch of nice looking restaurants such as <a href="http://www.caponesrestaurant.net/">Capones Jazz Club</a> (which has live jazz every night), <a href="http://www.georgelounge.com/">George Lounge</a> (a cocktail bar), and <a href="http://www.dineouthere.com/restaurants/milestones-restaurant-yaletown-part-6">Milestones</a> (a chain restaurant with upscale decor). After a glass of wine and a chicken salad at Milestones, we were looking to go some place &#8220;cooler&#8221; and chill out the rest of the evening.</p>
<p>We meandered over to Mainland Street and were intrigued by the mysterious looking sign that simply said &#8220;r.tl&#8221;, like some kind of secret code for a fabulous New York hideaway that only a few locals know about. This may be closer to reality than one may think &#8211; Vancouver&#8217;s food scene is getting to be well known on the international stage, offering some dining experiences that are as every bit exciting and substantial as the most prized eateries in New York and Paris.</p>
<p>While making trips around the world to try new restaurants may be a pastime of the privileged few, <strong>r.tl</strong> has a new concept that lets the ingredients, recipes, and traditions of fine regional cuisines of the world appear in the easily accessed (and perhaps more affordable) realm of its sleek, laid-back dining room. r.tl is called a &#8220;regional tasting lounge&#8221; for a reason, as the restaurant rotates its menu every quarter through different culinary locales, choosing two complimentary world regions to accompany the local fare of Coastal British Columbia.</p>
<p>Currently r.tl is featuring Portugal and France along with the BC region. My friend and I were really amazed by the taste of the Pacific mussels we ordered, which were served in a kind of corn-chowder sauce with some chorizo sausage (around $11). The drinks list at r.tl is extensive, including a selection of hand-picked, rare wines and cocktails from around the world.</p>
<p>I was fortunate to visit another time to try some of their Canapes (pictured below) which are miniature versions of some of their larger dishes.</p>

<p>We enjoyed their special menu for <a href="http://www.dineouthere.com/restaurants/dine-out-vancouver-event">Dine Out Vancouver</a> 2009, which was $38 per person before tax, tip, gratuity, and drinks. The atmosphere is awesome, the service is impeccable, and the restaurant&#8217;s food is very impressive. We were a little cowed by the wine list, which had the cheapest wine by the glass at $9.00 and a half litre for $30. So we didn&#8217;t order drinks, but the food (as shown below) was fabulous.</p>

<p>We went all out and ordered a huge feast, including a bottle of Dreamy Moon Sake (not pictured, $34). Below are pictured some of the items we ordered. The food was very creatively and artistically presented, and tasted great, but I wasn&#8217;t entirely full after the meal. Maybe that was a good thing &#8211; better than being too full, I guess! I think that ShuRaku is one of those places that favors quality over quantity.</p>
<p>The meal was a treat for the senses and tastebuds. One of my friends commented that he thinks that ShuRaku is better value than (but nearly at the level of quality as) Vancouver&#8217;s famed Japanese restaurant, <strong>Tojo&#8217;s</strong>. ShuRaku is a place I would bring an out-of-town guest who I wanted to impress, and not entirely break the bank while doing so.</p>

<blockquote><p>I love the size of the restaurant. It is intimate yet it avoids the slightly cramped feeling of, say, Pied-a-Terre or Grub. The design is cool too: exposed brick wall, mod furniture and woodiness.</p></blockquote>
<p>To start, I ordered an amazing sounding soup from their menu, the Bisque<strong> </strong>de Homard<strong> </strong>et Dungeness Crabe ($12, pictured below) which is lobster and dungeness crab bisque served with croutons, Rouille and Gruyere cheese. It tasted even better than it looked, and I&#8217;m a big fan of both lobster and crab so this was the perfect combination. Now I want to go to Paris, right away!! Speaking of Gruyere cheese, over the holidays I tried an incredible smoked Gruyere &#8211; I think it&#8217;s quickly becoming one of my favorite kinds of cheeses.</p>
<p>I was then treated to the <strong>Coq au Vin</strong> aux carottes fondantes et choux de Bruxelles braises ($19, also pictured below) which is braised hen in red wine with glazed carrots and brussel sprouts. I noticed that this item is no longer listed on their <a href="http://www.julesbistro.ca/menu.html">online menu</a> so they may have changed things up since I visited (Dec. 9th 2008). I really enjoyed this dish and would definitely order it again.</p>
<p>Like many of our city&#8217;s higher-end restaurants, Jules Bistro is also a popular hangout for some Vancouver celebrities and public figures. A friend reports that <strong>Gordon Campbell</strong> was dining at the next table to him, the night after I visited. After noticing Hon. Campbell, my friend chatted with the waitress and she said that the Premier had winked at her when ordering his soft drink, saying that he was the designated driver. Apparently that didn&#8217;t stop our Premier from having a raucous good time.</p>
<p>Future music star hopefuls might also want to pay Jules a visit, as <em>k-dawg73 </em><a href="http://www.dinehere.ca/restaurant.asp?r=2323">writes</a>: &#8220;Famed music manager <strong>Bruce Allen</strong> came in and sat down at the table next to us with a group of 6 other people.&#8221;</p>

<p>In a <a href="http://www.dineouthere.com/restaurants/goldfish-pacific-kitchen-yaletown">previous dinner time visit</a>, I enjoyed their ling cod ($22). Since then I&#8217;ve been back three times for lunch. Goldfish offers daily lunch specials which are $10 plus tax and tip. These specials really showcase the talents of executive chef <strong>William Tse</strong>.</p>
<p>Flat Iron Steak (on Thursdays) is served with mushrooms, snow pear, and mustard green salad. On Fridays, their special is the <strong>seafood fricassée</strong> (pictured below), with mussels, fresh fish, thai basil, coconut, and fresh chiles.</p>
<p>The flavors in the fricassée<strong> </strong>were fantastic, expertly crafted into bringing out the freshness of the seafood, with a rich broth that went with the rice perfectly. The fresh chiles were extremely spicy but our helpful server warned us about them, and thankfully they were served on the side. Another popular lunch choice from our table was the <strong>Shanghai Noodles</strong>, which can be ordered with beef short rib or chicken.</p>
<p>Many food fanatics (or &#8220;foodies&#8221; as they are affectionately known) love Vancouver because of the remarkable East-meets-West fusion that happens in the kitchens of our many talented, daring, and masterful chefs. As a port city we are fortunate to have some of the freshest ingredients arriving in our markets from Asia and the Pacific Northwest. Chefs like William Tse and restaurants like Goldfish are setting the stage for Vancouver as a world-class food city.</p>

<blockquote><p>The moules et frites ($11.99) arrived with puffs of steam wafting up, the P.E.I. mussels fat, perfectly steamed little morsels sitting in the most fragrant of broths. Accompanying the pot of shiny black shells lay a stack of fresh-cooked pomme frites, still glistening from their bath of hot oil. Crispy, golden-brown, and thinly sliced, the pomme frites were perfect for dipping into the pool of broth or the little container of their homemade mayonnaise. The calamari dish came in thick ringlets, fried to a glorious golden-brown, and looking ravishingly hot. The smoked-salmon baguette was clean tasting, jazzed up with capers and sweet onions, and sandwiched in the same lovely bread. The steak dish was pounded into a thin large slab, arrived on top of a layer of gravy-smothered frites.</p></blockquote>

<p>Pictured below is some of the food we enjoyed: the Saumon Sauvage (Wild salmon entree, around $16), the Calmars à la Nage (Calamari dish, $9.99), and the Escargots à l&#8217;Ail (snail in garlic, $5.99, a French delicacy!). My friend also ordered the T-Bone Steak served with fresh crab (not pictured), which he described as juicy and of really high quality (he&#8217;s a regular of steak places around town).</p>

The style of cuisine at Nu has definite French/European influences and a west-coast twist. The decor is space-age, the atmosphere is light hearted, and the patrons are stylish!</p>
<p>Nu Restaurant is located right out on the water on the north/downtown side of False Creek, underneath the Granville Bridge. There is ample free parking available in a lot shared with the <a href="http://letsgofordinner.com/Vancouver.cfm?detail=84">Stonegrill</a> restaurant (another restaurant worth visiting which is located in the same building, one floor above Nu).</p>
<p>To start, I enjoyed the Pan Seared Bayne Sound Scallops, with pickled mushrooms, cauliflower puree, and red wine jus ($16.10, pictured below). The scallops were really tender and tasted great! As a main course, I tried the Roasted Cornish Game Hen with smoked local gouda, braised swiss chard, wild BC mushrooms, and rich chicken jus ($26.10, also pictured below). The serving of Game Hen was fabulous, with a really prime cut of meat and a great combination of the cheese, mushrooms, rich jus and vegetables.  I finished off this fantastic meal with a Passion Fruit Sponge Cake ($7.90, pictured below) which was light and refreshing.</p>
<p>The restaurant also features live jazz for Sunday brunch with Juno nominee <a href="http://profile.myspace.com/index.cfm?fuseaction=user.viewprofile&amp;friendID=159837619">Melody Diachun</a>. <p>This downtown Vancouver restaurant focuses on seafood, with selections such as the <em>ling cod</em> (served with ginger, baby bok-choy vegetable, and a black bean reduction, $22, pictured below), and the <em>wild BC salmon</em> (with Asian BBQ sauce and a snow pea salad, $22, also pictured below). We also tried and enjoyed the <em>miso sake asparagus roll</em> ($8, with mushrooms, marinated tofu, spicy hoisin glaze, pictured below), the <em>wok tossed squid</em> (not pictured, $8), and the <em>creme brulee</em> for dessert (pictured below, $8, served with yummy shortbread cookies).</p>
<p>The restaurant has hip, tasteful decor that is reminiscent of the modern restaurants in recent James Bond movies, and can easily accommodate large groups or provide a more intimate atmosphere for a romantic dinner. Goldfish Pacific Kitchen also has an extensive wine list and a lively bar area that is popular with the upwardly mobile urban socialites of Vancouver&#8217;s &#8220;yuppie&#8221; Yaletown neighborhood.</p>
<p>Unfortunately the restaurant does not cater very well to vegetarians, with only two vegetarian main courses (although the kitchen would most likely accommodate special dietary needs if required). Valet parking is available, and the restaurant is quite near to the <a href="http://www.canadaline.ca/">Canada Line</a> train station which will be operational in 2009. It&#8217;s a generously sized restaurant that sits out on a pier in the Coal Harbour marina, with great waterfront and dock-side views. This is an impressive place to entertain visitors to Vancouver, have a fancy business lunch, or even enjoy a romantic dinner with live music later in the evening.</p>
<p>Cardero&#8217;s restaurant is about a 10-15 minute walk along the Coal Harbor waterfront from the Vancouver Convention Center downtown (Canada Place) as well as the downtown business district. It&#8217;s also really close to the Westin Bayshore Hotel.</p>
<p>Pictured below are the <strong>Fishermen’s Platter</strong> (2 fresh oysters, 2 jumbo prawns, 2 slices albacore tuna, 2 slices seared rare ahi tuna, and seaweed salad for $18.95), and the 10oz <strong>New York Steak</strong> (grilled, seasoned, with pink peppercorn sauce $28.95) to which I added a 1/2 dozen bistro prawns for $5.95.</p>

(<a href="http://www.granvilleisland.com/en/eat_and_drink">Granville Island</a> is an arts, culture, and food mecca in the centre of Vancouver, just across the Granville Bridge from downtown Vancouver.)</p>
<p>I tried the Linguini Vongole, which was made with fresh clams, garlic, olive oil, and parmesan (pictured below, $14.95), and this dish was frankly one of the best clam linguinis I have ever tasted. Sometimes the juice from the clams can make the pasta soggy, but at the Sandbar, my pasta had the perfect texture and the clams tasted great with the combination of garlic, olive oil, and parmesan cheese. </p>
<p>We also tried one of the signature appetizers, the <strong>Wok Squid </strong>($8.50, also pictured below)<strong> </strong>which was a level above the usual calamari you&#8217;ll find at most restaurants around town. We were given chopsticks for this dish, and the squid was pan fried in a light batter with chilies, garlic, cilantro, and ginger. Very tasty!!</p>

<p>(for interested camera buffs, I shot the first photo above using candlelight, with my Canon Digital Rebel XT, a Canon F1.4 50mm lens, at ISO 1600, 1/25 sec. and F1.8. I shot the second photo at ISO 1600, 1/30 sec. and F2.2. I had to take quite a few shots because the candle was flickering a lot, casting a different light every second. It so happened that I got a couple shots that I liked. We were sitting in the lounge at Sandbar and there were a number of TV&#8217;s surrounding us that were tuned to the sports channels, and these were also casting a variable light on the food. In this situation, with such unpredictable light, the trick is to just take lots of shots and then by chance you&#8217;ll get one you like. (I took 18 shots of the pasta and 7 shots of the squid.) I also calibrated the camera&#8217;s manual white balance setting by taking a picture of a white piece of printer paper, held up near the candle on the table. <p>And she wasn&#8217;t kidding about the gnocchi. I ordered the <strong>Gnocchi alla Reggiana </strong>which is soft gnocchi pasta served with Italian sausage, fresh tomato and basil sauce (pictured below, $12.95 at lunch), and this was a real treat &#8211; the sauce had just the right amount of garlic and tomato and left me wanting more. I also really enjoyed the <strong>Insalata alla Caprese, </strong>a salad made with Tomato, Bocconcini, and capers with fresh basil (also pictured below, $8.95 at lunch). Dinner prices are slightly more than lunch, around $16.95 for a pasta.</p>

			<content:encoded><![CDATA[<p><strong>Black Tuna Japanese Tapas Bistro </strong>(<a href="http://www.blacktunabistro.com/">web site</a>, #202 &#8211; 1184 Denman Street, downtown Vancouver, phone: 604-408-7557) is quite a find for exceptional food quality, an upscale atmosphere with aesthetically pleasing decor and a great view of the English bay beach from the window. It&#8217;s an intimate dining room located on the second floor of the commercial building on Denman Street, very close to the Davie intersection. We tried the Chef&#8217;s Special Dinner Box ($29.95) which in my opinion was really worth it (some of the items are pictured below). And to accompany the food I really liked the restaurant&#8217;s choice of laid-back jazz background music.</p>

Their signature dish is Spaghetti with Kobe Beef Meatballs, which I must say is not your ordinary spaghetti and meatballs. The spaghetti is done in a light cream sauce with black truffle shavings on top. The meatballs are liberally garnished with fresh herbs and spices that make them simply irresistible. ($25, pictured below)  We also tried the Satay Platter ($23, pictured below) which included a big selection of little delicious grilled items such as the lamb, octopus, chicken, beef, salmon, and prawns.</p>

			<content:encoded><![CDATA[<p><strong>Griffins at the Hotel Vancouver</strong> (900 West Georgia Street, Vancouver, phone 604-684-3131) is a decidedly upscale and yet casual restaurant in the sumptuous Hotel Vancouver in the middle of downtown. Most of the patrons at lunch were wearing business attire, but this was not surprising considering that the restaurant is located very close to Vancouver&#8217;s main business and financial district. The attraction here is the lunch buffet which is a somewhat formidable $27, but at this price offers a good degree of quality as well as the expected quantity. Pictured below are some of my choices from the buffet table: there is a variety of cold and hot selections including seafood, salads, soup, cuts of meat and pasta dishes, as well as some very tempting desserts.</p>

			<content:encoded><![CDATA[<p><strong>Da Gino Ristorante Italia</strong> (475 West Georgia St, phone (778) 371-7355) is a welcoming Italian restaurant across the street from the Vancouver Main Library downtown. The pristine white tablecloths, wine glasses, and suit-attired servers gave me the impression that this is a &#8220;fine dining restaurant&#8221; but looking at the prices I was pleasantly surprised. For lunch, entrees were in the $10 &#8211; 14 range, and for dinner I think they aren&#8217;t much more. I really enjoyed my clam linguini (which had another, fancier Italian name which I can&#8217;t remember). Clams were served in their shells on a bed of perfectly al-dente pasta. Yum!</p>
