<p>I think that every successful restaurant needs a &#8220;concept&#8221;, a unique identity, something that differentiates itself in such an incredibly fierce competitive market that supports the dining industry in Vancouver.</p>
<p>It&#8217;s an industry which demands continuous hard work from employees and owners with little respite, where margins are typically low and consumer opinion (or a lack thereof) can make or break a business.</p>
<p>But the rewards from running a restaurant are high: an idea, creative vision, a passion for food and culture &#8211; all these can be transformed into a physical space that is temporarily occupied by visitors who seek to experience new tastes, sensations, socialize, be merry, and above all, satisfy their appetites with delicious, healthy food.</p>
<p>I tend to think about restaurants as &#8220;experience engines&#8221;. As a software developer I like to look at things in terms of the input, output, and transformations that occur during a process. For a restaurant, there are the physical ingredients and energy needed to prepare food &#8211; these are the obvious inputs. But there are also the less tangible things, like the moods and attitudes of the serving staff, the restaurant decor, the background music, and then of course the restaurant guests themselves.</p>
<p>But I digress, I really should be talking about the food at Posh.</p>
<p><strong>Posh</strong> is an example of an expanding, successful home-grown restaurant chain with an excellent concept: <strong>Japanese Sukiyaki</strong> (<a href="http://en.wikipedia.org/wiki/Sukiyaki">wikipedia</a>).</p>
<p>So what is Sukiyaki you may ask? Well, it&#8217;s a form of Hot Pot, where you have a gas burner at your table with a large cast-iron pot filled with a bubbling broth. The broth is made with a combination of Sukiyaki Sauce (soya sauce, sugar, and <a href="http://en.wikipedia.org/wiki/Mirin">mirin</a>) and cabbage. You add thinly sliced raw beef into the pot along with assorted vegetables, tofu, noodles and seafood, and everything cooks right in front of you.</p>
<p>The nice thing is that you decide exactly what you want to eat, and if you particularly like a certain item, such as the fish cakes (yum!), just order more of it! Or if you&#8217;re vegetarian, there are plenty of options such as tofu, spinach, and several types of mushrooms to make a soup that fits your diet.</p>
<p>Amazingly, Posh provides an &#8220;all you can eat&#8221; experience for $11.88 per person for lunch, or $15.88 per person for dinner. The restaurant always seems packed at peak times, so it&#8217;s a good idea to try making a reservation and coming early to put your name in the queue just in case.</p>

Having attended their open house a few weeks ago (see <a href="http://www.dineouthere.com/restaurants/irashai-grill-downtown-coal-harbour">Part 1</a>), I was interested in trying out the restaurant for an actual meal. I was in for a real treat!</p>
<p>My friend and I first ordered the <a href="http://www.makemysushi.com/sushi-recipes/sushi-dragon-roll-recipe.html">Dragon Roll Sushi</a> ($13.50, pictured below), which looked and tasted amazing. The Dragon Roll was on their special rolls menu (not listed on their <a href="http://www.irashaigrill.com/">web site</a>) and was a creation made with shrimp, tempura, avocado, barbecued eel (<em>unagi</em>), and of course the sushi rice and <em>nori</em> seaweed. It was quite sweet tasting (because of the sauce that the eel is marinated with), and was light and immensely satisfying. I commented to my friend that I could easily eat one of these every day. If only I could afford it!</p>
<p>The <a href="http://en.wikipedia.org/wiki/Sunomono">Tako Sunomono</a> (a cold salad made with octopus, vermicelli noodles and a sweet and tangy vinegary broth) was $7.50 and was presented very nicely in a large cocktail glass (pictured below). It is one of my favorite appetizers at Japanese restaurants and the Irashai version did not disappoint! I would have liked it to be bigger, but that is just my wishful thinking because it <em>was </em>a decent size for an appetizer after all.</p>
<p>Now comes to the most interesting part of the meal. We were perusing the menu and discovered a very unusual sounding sushi roll item. Unusual I say? Yes! I&#8217;ll explain.</p>
<p>In general, for creative dishes that are designed by the chef using a culinary &#8220;artistic license&#8221;, the name of the dish, if it is somewhat abstract and not a simple description of the ingredients, will relate to the theme of the dish in some way. What this means is, I was curious to see exactly what a <strong>Poison Spider Volcano </strong>would taste like. No kidding! Would there be an actual spider involved in this sushi, and would this spider have some sort of deadly poison? Also it was very important for me to find out how a volcano would be represented in the form of rice and other sushi-like ingredients on a dinner plate.</p>
<p>The good old poison spider and its friendly volcano home ($16, pictured below) was made with asparagus, soft shell crab, cream cheese, and was sprinkled with cheese. It was baked before serving and then topped with a super spicy miso sauce. Super spicy is an understatement! The powerful spicy sauce reminded me of the <a href="http://www.dineouthere.com/restaurants/mr-sushi-davie-street">Crazy Boy Roll at Mr. Sushi</a> but the Poison Spider Volcano sushi had a much more complex and rich flavor (thanks to the cheese and cream cheese). It was very filling, which is a good thing in my books. My vote: thumbs up, but the sauce was too spicy for my friend.</p>
<p>For dessert we tried their Marscapone Tiramisu ($5.50, also pictured below) which was a generous amount of cool sweet <a href="http://en.wikipedia.org/wiki/Mascarpone">marscapone cheese</a> served in an interesting ceramic tray topped with a layer of dusted cocoa. The cocoa was very fine and powdery. This was a wonderful contrasting dish to calm things down after the spicy spider!</p>

<p>Irashai is currently the talk of the town, after hosting a big open house party last week for local residents, bloggers, and news media. Below are some photos that show off the restaurant&#8217;s upscale decor and delicious food. I&#8217;d really like to go back to try a full meal at Irashai. <p>At Toratatsu the Uno family has created a space that looks like a cozy New York bistro, but with a definite Japanese vibe that they say &#8220;would fit downtown Tokyo perfectly.&#8221; Chef Kodai Uno, 26, trained at the <a href="http://www.picachef.com/">Pacific Institute of Culinary arts</a> and at French restaurant L&#8217;Emotion, and is the youngest in a family of professional chefs. He brings a great deal of creativity and skill to his kitchen, crafting modern Japanese tapas with a fusion twist.</p>
<p><em>itadakimasu</em>, a reviewer on DineHere.ca writes (<a href="http://www.dinehere.ca/restaurant.asp?r=2598">click here to read review</a>):</p>
<blockquote><p>I was getting a little tired of Gyoza King and Hapa (which I both still like) so had to try this place. The decor is cool and comfy. The service friendly (always smiling) and the food was great! familiar dishes like Agedashi Tofu but with a twist (yama imo potato on top with tasty sauce). We also had the daikon salad (those are little fish sprinkled on top) which was so good, had to order a second.</p></blockquote>
<p>My friends and I were quite hungry so we sampled a lot of delicious dishes (some pictured below).</p>
<p>For an order of <strong>chef&#8217;s special sashimi</strong> ($15.80) we chose the <em>saba</em> (mackerel), scallops, and salmon. The mackerel and scallops were seared with a blow torch right at our table, which made for quite the fiery entertainment!</p>
<p>The <strong>crab avocado salad</strong> ($8.80) was delicate and light, combining two of my favorite ingredients in a most favorable way.</p>
<p>The <strong>Ebi Chili Mayo</strong> ($8.00, deep fried prawn with Japanese mayonnaise and hot chili sauces) was gigantic and disappeared in a flash.</p>
<p>The <strong>Cheese Tofu</strong> ($6.80) looked like a fancy dessert cheese with strawberries, slivered almonds, and a sweet glaze, but tasted like a combination of custard, tofu, and a soft brie cheese. We also tried the <strong>Ishiyaki Risotto</strong> ($8.30) which was a nice sticky rice mixed with some succulent seafood.</p>
<p>My friends also ordered the Smoke Kissed Duck ($8.80), the Tarako Kimchi Udon ($7.80), and the Sashimi salad ($8.80), which looked amazing but I didn&#8217;t get a chance to try them. Hopefully next time!</p>

Knowing it was izakaya (tapas), we weren’t expecting huge portions, but trying out several sharing plates. We started with the ahi tuna sashimi (melts in your mouth), then had the calamari (loved how it was made) followed with the Ebi Mayo and the Black Cod.</p></blockquote>

<p>Late on a Saturday night, a friend and I were wandering the misty streets of this former warehouse district, and poked our heads into a bunch of nice looking restaurants such as <a href="http://www.caponesrestaurant.net/">Capones Jazz Club</a> (which has live jazz every night), <a href="http://www.georgelounge.com/">George Lounge</a> (a cocktail bar), and <a href="http://www.dineouthere.com/restaurants/milestones-restaurant-yaletown-part-6">Milestones</a> (a chain restaurant with upscale decor). After a glass of wine and a chicken salad at Milestones, we were looking to go some place &#8220;cooler&#8221; and chill out the rest of the evening.</p>
<p>We meandered over to Mainland Street and were intrigued by the mysterious looking sign that simply said &#8220;r.tl&#8221;, like some kind of secret code for a fabulous New York hideaway that only a few locals know about. This may be closer to reality than one may think &#8211; Vancouver&#8217;s food scene is getting to be well known on the international stage, offering some dining experiences that are as every bit exciting and substantial as the most prized eateries in New York and Paris.</p>
<p>While making trips around the world to try new restaurants may be a pastime of the privileged few, <strong>r.tl</strong> has a new concept that lets the ingredients, recipes, and traditions of fine regional cuisines of the world appear in the easily accessed (and perhaps more affordable) realm of its sleek, laid-back dining room. r.tl is called a &#8220;regional tasting lounge&#8221; for a reason, as the restaurant rotates its menu every quarter through different culinary locales, choosing two complimentary world regions to accompany the local fare of Coastal British Columbia.</p>
<p>Currently r.tl is featuring Portugal and France along with the BC region. My friend and I were really amazed by the taste of the Pacific mussels we ordered, which were served in a kind of corn-chowder sauce with some chorizo sausage (around $11). The drinks list at r.tl is extensive, including a selection of hand-picked, rare wines and cocktails from around the world.</p>
<p>I was fortunate to visit another time to try some of their Canapes (pictured below) which are miniature versions of some of their larger dishes.</p>

Cassis Bistro is a French tapas bistro hidden away in a somewhat seedier area of downtown Vancouver on the edge of Gastown (about two blocks from the <a href="http://en.wikipedia.org/wiki/Granville_Station_(Vancouver)">Granville Skytrain station</a>).</p>
<p><strong>Ron Brill</strong> of Martiniboys (<a href="http://www.martiniboys.com/Vancouver/Cassis-Bistro-review.html">click here to read review</a>) writes of &#8220;&#8230;elegantly simple, modern tapas fare&#8230;alluring French flavours&#8230;&#8221; and I concur. Cassis Bistro is definitely deserving of the positive buzz it has been getting recently.</p>
<p>Pictured below are some of the items we ordered. First was the complimentary <em>amuse bouche, </em>which was olives and antipasto served with French bread. The olives and antipasto were served in an interesting narrow tray and whetted the appetite perfectly. For an appetizer, we ordered a crepe with Brie cheese (around $10), which tasted great. Looking at the photo brings back fond memories! For the main course I ordered<em> </em>the Duck a l&#8217;Orange ($17.50). The menu describes this item as<span style="color: #808080;"><span style="font-family: Tahoma;">:</span></span></p>
<blockquote><p>Duck and oranges: a combination popular in many countries. This dish consists of Muscovy duck braised with oranges.</p></blockquote>
<p>Let me say, the Duck a l&#8217;Orange was fantastic (or should I say <a href="http://www.wordreference.com/fren/merveilleux"><em>merveilleux </em></a> &#8220;en Francais&#8221;). I am a huge fan of orange juice and oranges in general, and duck is always a special treat for me since I don&#8217;t cook it at home. So this was a match made in heaven.</p>
<p>We also ordered a side dish of some vegetables: beets and zucchini (also pictured below, around $5). This went very well with a side of <a href="http://en.wikipedia.org/wiki/B%C3%A9chamel_sauce">bechamel sauce</a>.</p>

<p>We went all out and ordered a huge feast, including a bottle of Dreamy Moon Sake (not pictured, $34). Below are pictured some of the items we ordered. The food was very creatively and artistically presented, and tasted great, but I wasn&#8217;t entirely full after the meal. Maybe that was a good thing &#8211; better than being too full, I guess! I think that ShuRaku is one of those places that favors quality over quantity.</p>
<p>The meal was a treat for the senses and tastebuds. One of my friends commented that he thinks that ShuRaku is better value than (but nearly at the level of quality as) Vancouver&#8217;s famed Japanese restaurant, <strong>Tojo&#8217;s</strong>. ShuRaku is a place I would bring an out-of-town guest who I wanted to impress, and not entirely break the bank while doing so.</p>

<blockquote><p>Great place to &#8220;chill&#8221;. I&#8217;ve come here a few times before (always during the dinner hour) and have likened each experience. It&#8217;s decorated like a lounge with large (and comfortable) low chairs. [...]the dishes are prepared impeccably well. I will return to try out their brunch/lunch menus.</p></blockquote>
<p>The crowd is mostly well-heeled twenty and thirty-somethings, who get together to have a good time. The low-light atmosphere is happy, relaxed, and at times boisterous, with much cavorting, indulging, romancing, and &#8220;chilling&#8221; going on.</p>
<p>To start, I had the <strong>Duck Bacon Unwrapped Scallops</strong> ($13, pictured below) which their menu describes as &#8220;Baja scallop and citrus ceviche topped with coffee and molasses cured duck bacon on brioche&#8221;. Phew, that&#8217;s quite a description, but my interest was piqued by the creative combination of ingredients. Fusion at its best, I thought while munching contentedly on every last bit of the Ceviche.</p>
<p>The main course I tried was the <strong>Sea Tiger Prawns</strong> ($25, also pictured below), which are grilled prawns in a lemon basil oil with a spinach and almond risotto. My dining companion commented that the chef had presented this dish differently on a previous visit (my serving was more &#8220;aggressive&#8221; looking, kind of like an angry crab). An angry crab made of risotto and prawns is an angry crab that I would like to meet again!</p>

<p>The HSG (as it is affectionately called, not to be mistaken with <a href="http://en.wikipedia.org/wiki/Monosodium_glutamate">MSG</a> which the chef most certainly avoids in his/her kitchen) is a favorite lunch place for me and my coworkers, as our office is nearby. Lunch prices are in the $11 to $15 range and dinner entrees are in the $25 to $35 range. The restaurant&#8217;s menus are available on their <a href="http://www.hamiltonstreetgrill.com/">web site</a>.</p>
<p>Pictured below is the <strong>Hamilton Street Burger</strong> ($12), which is made with house-ground Certified Angus Beef, bacon, cheddar cheese, sautéed onions, and chipotle mayo. I ordered my burger with a Caesar salad (included in the price) but I could have gotten a regular house salad, their popular Yam Fries, or regular fries instead. I thought the burger was especially delicious and gobbled up the whole thing in a flash (all the while making conversation and being pleasant of course!).</p>

<p>It may seem strange when you step in and there&#8217;s only one or two other tables in the restaurant, but then, depending when you go, it generally fills up. I&#8217;ve gone on a Saturday for lunch, and a weeknight for dinner, and both times it was empty at first, but filled up later. So go a little later for the atmosphere, I guess.</p></blockquote>

<p>Nu Restaurant is located right out on the water on the north/downtown side of False Creek, underneath the Granville Bridge. There is ample free parking available in a lot shared with the <a href="http://letsgofordinner.com/Vancouver.cfm?detail=84">Stonegrill</a> restaurant (another restaurant worth visiting which is located in the same building, one floor above Nu).</p>
<p>To start, I enjoyed the Pan Seared Bayne Sound Scallops, with pickled mushrooms, cauliflower puree, and red wine jus ($16.10, pictured below). The scallops were really tender and tasted great! As a main course, I tried the Roasted Cornish Game Hen with smoked local gouda, braised swiss chard, wild BC mushrooms, and rich chicken jus ($26.10, also pictured below). The serving of Game Hen was fabulous, with a really prime cut of meat and a great combination of the cheese, mushrooms, rich jus and vegetables.  I finished off this fantastic meal with a Passion Fruit Sponge Cake ($7.90, pictured below) which was light and refreshing.</p>
<p>The restaurant also features live jazz for Sunday brunch with Juno nominee <a href="http://profile.myspace.com/index.cfm?fuseaction=user.viewprofile&amp;friendID=159837619">Melody Diachun</a>. <p>Enjoy dishes that bring out the best of London-style cuisine, such as the Chelsea Flair (sauteed wild sockeye salmon with red onion marmalade, served on a bed of sauteed potatoes, $17.95) or the Knightsbridge Chic (half garlic herb-roasted game hen served with tomato ragout and saffron rice, $16.95). Or if you&#8217;re looking for something a little more traditional, there&#8217;s always the comforting and satisfying Shepherd&#8217;s Pie ($12.50, served with mixed greens) which is a rich stew served with mashed potatoes, vegetables and a tasty gravy. <p>The minimalistic decor evokes some great restaurants and hotels I experienced while visiting the Yucatan Peninsula in Mexico, which catered mainly to Mexicans on vacation rather than American tourists.</p>
<p>Susan Hollis <a href="http://www.martiniboys.com/Vancouver/Tequila-Kitchen-review.html">writes</a>, &#8220;Tequila Kitchen encourages diners to taste the soul food of Mexico&#8221;, and I agree &#8211; the fresh guocamole, home-made salsa, and corn tortillas stuffed with scrumptious goodness brought me back to the streets of the towns I visited in Mexico. CityFood Magazine has some <a href="http://www.cityfood.com/EN/previews/tequila_kitchen_-_a_preview/">photos</a> and reveals that owner <strong>Laura Enriquez </strong>spent over twenty years running successful restaurants in Playa Del Carmen.</p>
<p>Pictured below are items from Tequila Kitchen&#8217;s signature Lunch Platter ($13) which is an affordable way to try a variety of tasty temptations, including: guacamole, salsa, 1 <em>Tostada de Pollo</em> (shredded chicken on an oven baked tortilla topped with lettuce, avocado, green salsa, onion cream and cheese), 2 <em>Tacos de Cochinita</em> (pulled pork slowly cooked in juicy annatto sauce in soft corn tortillas with marinated red onions), 2 <em>Tacos de Rajas</em> (Poblano rajas, sauted chicken and onions with cheese in a creamy sauce served in soft corn tortillas), rice, beans &amp; salad. <p>This downtown Vancouver restaurant focuses on seafood, with selections such as the <em>ling cod</em> (served with ginger, baby bok-choy vegetable, and a black bean reduction, $22, pictured below), and the <em>wild BC salmon</em> (with Asian BBQ sauce and a snow pea salad, $22, also pictured below). We also tried and enjoyed the <em>miso sake asparagus roll</em> ($8, with mushrooms, marinated tofu, spicy hoisin glaze, pictured below), the <em>wok tossed squid</em> (not pictured, $8), and the <em>creme brulee</em> for dessert (pictured below, $8, served with yummy shortbread cookies).</p>
<p>The restaurant has hip, tasteful decor that is reminiscent of the modern restaurants in recent James Bond movies, and can easily accommodate large groups or provide a more intimate atmosphere for a romantic dinner. Goldfish Pacific Kitchen also has an extensive wine list and a lively bar area that is popular with the upwardly mobile urban socialites of Vancouver&#8217;s &#8220;yuppie&#8221; Yaletown neighborhood.</p>
<p>Unfortunately the restaurant does not cater very well to vegetarians, with only two vegetarian main courses (although the kitchen would most likely accommodate special dietary needs if required). Valet parking is available, and the restaurant is quite near to the <a href="http://www.canadaline.ca/">Canada Line</a> train station which will be operational in 2009. <p>Cardero&#8217;s restaurant is about a 10-15 minute walk along the Coal Harbor waterfront from the Vancouver Convention Center downtown (Canada Place) as well as the downtown business district. It&#8217;s also really close to the Westin Bayshore Hotel.</p>
<p>Pictured below are the <strong>Fishermen’s Platter</strong> (2 fresh oysters, 2 jumbo prawns, 2 slices albacore tuna, 2 slices seared rare ahi tuna, and seaweed salad for $18.95), and the 10oz <strong>New York Steak</strong> (grilled, seasoned, with pink peppercorn sauce $28.95) to which I added a 1/2 dozen bistro prawns for $5.95.</p>

It&#8217;s an intimate dining room located on the second floor of the commercial building on Denman Street, very close to the Davie intersection. We tried the Chef&#8217;s Special Dinner Box ($29.95) which in my opinion was really worth it (some of the items are pictured below). And to accompany the food I really liked the restaurant&#8217;s choice of laid-back jazz background music.</p>

Their signature dish is Spaghetti with Kobe Beef Meatballs, which I must say is not your ordinary spaghetti and meatballs. The spaghetti is done in a light cream sauce with black truffle shavings on top. The meatballs are liberally garnished with fresh herbs and spices that make them simply irresistible. ($25, pictured below)  We also tried the Satay Platter ($23, pictured below) which included a big selection of little delicious grilled items such as the lamb, octopus, chicken, beef, salmon, and prawns.</p>

			<content:encoded><![CDATA[<p><strong>Ebisu on Robson</strong> (827 Bute Street, Vancouver, phone 604-689-8266) serves Japanese tapas and Asian-western fusion food, appealing to the younger, hip Asian crowd as well as food enthusiasts seeking a taste above the ordinary. Recently taking over from &#8220;Hooters&#8221; in this spacious 2nd floor room overlooking Robson street, Ebisu has a varied menu that ranges from delectable sushi concoctions such as the &#8220;Crunch &#8216;n Munch&#8221; roll ($12.97, pictured below) to Rack of Lamb and even pumpkin soup and fish tacos. The Oyster Blowout ($12.78, pictured below) has got to be my favorite item. It&#8217;s a huge platter of 12 fresh raw oysters served with a variety of sauces and toppings. We ordered some more inspired Japanese items, such as the Ika Meshi (stuffed squid rolls, pictured below, $11.11), the Deluxe Tempura ($14.77, pictured below), and the Sashimi Salad ($9.57, pictured below).</p>
